Like many of our most beloved recipes, Chicken alla Joe didn’t start as a grand culinary plan. It started with a conversation. Years ago, a regular guest asked our longtime waiter, Adorno “Joe” Pacini, if the kitchen could prepare a chicken dish with a little more punch, something bright, bold, and unmistakably Italian.
Joe brought the idea to the kitchen, and together, they created what would become a Gene & Georgetti staple: bone-in chicken, broiled until juicy and crisp, finished with sweet bell peppers, pepperoncini, fresh lemon juice, and Italian seasoning. Simple. Honest. Perfectly balanced.
The dish wasn’t named for flair or fanfare. It was named for the man who helped bring it to life, and for the spirit of the restaurant itself. At Gene & Georgetti, the best ideas have always come from listening.
